Because it is the last version before the "Touch Bar" UI overhaul. It is snappy. It handles .fmp12 files perfectly. And most importantly—it doesn't nag you to upgrade to the cloud every 15 minutes.
Version 16 was the only version that deeply integrated the now-deprecated Touch Bar. Database developers could customize the Touch Bar to show specific fields, run scripts, or navigate records with a tap. For users still on a 2017–2019 MacBook Pro, this is a unique productivity boost.
