Do you have an old Physical Memory Card and a memory card reader (like a USB adapter)? This is the best way to keep your original progress.
AetherSX2 uses two types of saves:

If you are a Steam Deck user playing via EmuDeck (which uses AetherSX2/PCSX2 backend), you can sync your save data across your Deck and Android phone. God of War originally saved to memory card (slot 1)
The Sync Method:
If you still have an old PS2 memory card with your childhood save file, you can extract it to your PC, convert it, and load it into AetherSX2. This guide covers that, too.
